6 lbs. lard
1 can lye
Melt lard in large Kettle.
Dissolve lye in 1 qt. cold water. Cool
both. Pour lye into fat until thickened.
Pour this mixture into shallow wooden
box. Do not handle soap for 2 weeks.

## Instructions
1. Melt lard in a large kettle.

## Ingredients
- 1 1/2 cups sugar
- 1 1/2 cups milk
- 2 eggs
- 2 Tbsp lard, not hot
- 2 tsp baking powder
- 1 tsp salt
- Flour
## Instructions
1. Combine sugar, milk, eggs, and lard (not hot).
2. Add baking powder and salt.
3. Mix in enough flour to form a dough. -

"MEAL OF THE MONTH"
★ FRENCH FRIED ONIONS
3 large Bermuda onions 3/4 teaspoon salt
1 cup flour Star Lard for frying
1 1/3 cups milk
Mix flour and salt and stir in milk to form a
very thin pour batter. Cut onions in 1/4-inch
slices and separate into rings. Dip each ring
in batter and fry in deep Star Lard heated to
365° to 375° F. Drain on absorbent paper.
Serve piping hot.
★ CHERRY PIE
2 cups pastry flour 2 tablespoons Cloverbloom
1 teaspoon salt Butter
1/2 cup Star Lard 4 tablespoons flour or
6 tablespoons ice water minute tapioca
2 cups drained cherries 3/4 cup sugar
1 cup juice from cherries
Crust: Sift flour and salt. Cut in lard with two
knives or pastry blender. Add water gradually,
pressing the dough together. Chill. Divide and
roll out in 2 circles to fit pie pan. Fit lower
crust to pan, sprinkle lightly with a little
flour and add the hot filling. Cover with top
crust, crimp edges, cut holes in top crust to
allow steam to escape and bake at 425° F. for
20 minutes. Turn oven to 350° F. and bake an
additional 20 minutes.
Filling: Mix sugar and flour or tapioca. Add
juice and butter and bring to a boil. Add
cherries and pour into pie shell.

## French Fried Onions
### Ingredients
- 3 large Bermuda onions
- 1 cup flour
- 1 1/3 cups milk
- 3/4 tsp salt
- Star Lard for frying
### Instructions

Cinnamon Ginger
Roll out & cut
I roll it out so as
to get 2 doz cookies
sort of thick -
Bake 360°-
10 to 12 min.
Oh I sprinkle sugar
on them sometimes
before baking.

# Soft Molasses Cookies
*From Marie, January 4, 1965, St. Pete, Florida*
## Ingredients
- 2 level tsp baking soda
- 1/2 cup molasses
- 1/4 cup butter, melted
- 1/4 cup lard, melted (scant; or use margarine)
- 1 egg, beaten
- 1/2 cup sugar
- 2 Tbsp water
- 1 Tbsp vanilla
- 2 1/4 cups flour, sifted (more as needed)
- Cinnamon, to taste
- Ginger, to taste
- Sugar for sprinkling (optional)
## Instructions
1. Combine 2 level tsp baking soda into 1/2 cup molasses. Let sit for a few minutes.
2. Melt 1/4 cup butter and 1/4 cup lard together (scant; margarine may be used).
3. Beat 1 egg and add to the butter and lard mixture along with 1/2 cup sugar.
4. Mix all together with 2 Tbsp water and 1 Tbsp vanilla.
5. Sift in 2 1/4 cups flour along with cinnamon and ginger; mix to combine.
6. Roll out dough and cut into cookies, rolling fairly thick.
7. Sprinkle with sugar before baking if desired.
8. Bake at 360° for 10 to 12 minutes. -

# Date Cake
## Ingredients
- 1 cup chopped dates
- 1 cup hot water with 1 tsp baking soda, turned over dates
- 1 cup sugar
- 1 egg
- 1/2 cup butter and lard, mixed
- 1 1/2 cups flour with pinch of salt
- 1/2 cup chopped nuts (save some to sprinkle on top)
- 1 tsp vanilla
## Instructions
1. Pour hot water mixed with baking soda over chopped dates. Let stand while mixing remaining ingredients.
2. Mix together sugar, egg, and butter and lard mixture.
3. Add flour with pinch of salt and mix together.
4. Stir in chopped nuts and vanilla.
5. Pour batter into pan. Sprinkle reserved nuts over top before baking.
6. Bake at 350°F for 3/4 hour. -

# Bread Rolls (Yeast Dough)
## Ingredients
- 1 tsp salt
- 2 cups milk
- 1/2 cup butter + lard
- 1/2 cup sugar
- 1 cake yeast
- 2 eggs
- 5-6 cups flour (inferred)
## Instructions (inferred)
1. Proof yeast in a little lukewarm water or warm milk
2. Scald and cool milk, combine with sugar, salt, fat
3. Add eggs and yeast, incorporate flour gradually
4. First rise ~1–1½ hours, shape, second rise ~45–60 minutes
5. Bake ~375°F for 18–22 minutes
