Place in saucepan: 2 ounces

7 T. milk, 2 T. butter. 1 T. corn syrup

- 1 1/2 cups sugar

- 2 Tbsp butter
- 1 Tbsp corn syrup
- 1/4 tsp salt
- 1 tsp vanilla
## Instructions
1. Place in saucepan: chocolate, sugar, milk, butter, corn syrup, and salt.
2. Bring slowly to a full rolling boil, stirring constantly.
3. Boil briskly for 1 minute (1 1/2 minutes on a rainy or humid day).
4. Cool to lukewarm.
5. Add vanilla and beat until thick enough to spread.
6. If too hard, add a little cream or soften over hot water. -
Fudge Frosting
FUDGE FROSTING (LELA)
Mix together thoroly: 2 c. sugar, ¼ c. white corn
syrup, ½ c. milk, ½ c. shortining, 2 sq. unsweetened
chocolate, ¼ t. salt.
Stir over low heat till short. and chocolate are melted;
then, stirring constantly, bring to full boil. Boil for
exactly one minute
Remove from heat and beat until lukewarm; add 1 t.
vanilla and continue beating till icing loses gloss.
Considerable beating is required for creamy consistency

# Fudge Frosting
*Recipe from the kitchen of Lela*
## Ingredients
- 2 cups sugar
- 1/4 cup white corn syrup
- 1/2 cup milk
- 1/2 cup shortening
- 2 squares unsweetened chocolate (2 oz)
- 1/4 tsp salt
- 1 tsp vanilla
## Instructions
1. Mix together thoroughly: sugar, white corn syrup, milk, shortening, unsweetened chocolate, and salt.
2. Stir over low heat until shortening and chocolate are melted.
3. Then, stirring constantly, bring to a full boil. Boil for exactly one minute.
4. Remove from heat and beat until lukewarm.
5. Add vanilla and continue beating until icing loses its gloss.
6. Considerable beating is required for a creamy consistency. -

CHOCOLATE COVERED ALMOND CRUNCH
TOAST 2 cups ground almonds till light brown. (slow oven

add sugar (2cups) and stir in till blended and sugar is
melted. Add ¼ cup water, 2 tbls light corn syrup and
slowly bring to boil. Boil to just barely the brittle

cups of the toasted almonds. Pour into a shallow pan
to cool. When cold, spread with 1 package Chocolate
chips and sprinkle with half the remaining nuts. Turn
to other side and repeat with 1 pkg melted chips. Cut

- 2 cups butter
- 2 cups sugar
- 1/4 cup water
- 2 Tbsp light corn syrup
- 2 packages chocolate chips
## Instructions
1. Toast 2 cups ground almonds in a slow oven until light brown.
2. Melt butter in a heavy saucepan over low heat.
3. Add sugar and stir until blended and sugar is melted.
4. Add water and corn syrup and slowly bring to a boil.
5. Boil to just barely the brittle stage.
6. Remove from heat and stir in briskly 1 1/3 cups of the toasted almonds.
7. Pour into a shallow pan to cool.
8. When cold, spread with 1 package of chocolate chips and sprinkle with half the remaining toasted almonds.
9. Turn to the other side and repeat with 1 package of melted chocolate chips.
10. Cut into serving pieces. -

stir briskly into it ½ cup nuts. Pour into shallow pan to
cool. When cold, spread ½ pkg Chocolate chips, melted
ansd sprinkle with ¼ cup nuts. Turn to other side add
repeat frosting, ending with sprinkling with remaining
¼ cup nuts. Cut into xxxxxxxxxxxxxxxxx serving pieces.

# Chocolate Covered Almond Crunch
## Ingredients
- 1 cup ground almonds, toasted

- 1/2 cup nuts (stirred in)
- 1/2 pkg chocolate chips
- 1/4 cup nuts (for first side topping)
- 1/4 cup nuts (for second side topping)
## Instructions
1. Toast 1 cup ground almonds in a slow oven until light brown.
2. Melt butter in a heavy saucepan over low heat. Add sugar; stir until blended and sugar is melted.
3. Add 2 Tbsp water and 1 Tbsp light corn syrup; bring slowly to a boil.
4. Boil to just barely brittle stage (300°F to 305°F).
5. Remove from heat and stir briskly into it 1/2 cup nuts.
6. Pour into a shallow pan to cool.
7. When cold, spread melted chocolate chips (1/2 pkg) over the top and sprinkle with 1/4 cup nuts.
8. Turn to the other side and repeat frosting, ending with sprinkling with the remaining 1/4 cup nuts.
9. Cut into serving pieces. -
Chocolate Pecan Pie
Card 1 Front:
CHOCOLATE PECAN PIE-BAKER'S CHOCOLATE/KARO SYRUP
3 eggs, slightly beaten
1 cup KARO Light or Dark Corn Syrup
1 pkg.. (4 oz.) BAKER'S GERMAN'S Sweet Chocolate
or 4 squares (4 oz.) BAKER'S Semi-Sweet Choc-
olate, melted and cooled
1/3 cup sugar
2 TB. butter or margarine, melted
1 teaspoon vanilla extract
1½ cups pecan halves
1 unbaked 9" pastry shell
In large bowl, stir eggs, corn syrup, chocolate
sugar, butter, and vanilla until well blended.
Stir in pecans. Pour into pastry shell. Bake

*Recipe by Baker's Chocolate & Karo Syrup*
*Makes 8 servings*
## Ingredients
- 3 eggs, slightly beaten
- 1 cup Karo Light or Dark Corn Syrup
- 1 pkg. (4 oz.) Baker's German's Sweet Chocolate, or 4 squares (4 oz.) Baker's Semi-Sweet Chocolate, melted and cooled
- 1/3 cup sugar
- 2 Tbsp butter or margarine, melted
- 1 tsp vanilla extract
- 1 1/2 cups pecan halves
- 1 unbaked 9" pastry shell
## Instructions
1. In a large bowl, stir eggs, corn syrup, chocolate, sugar, butter, and vanilla until well blended.
2. Stir in pecans.
3. Pour into pastry shell.
4. Bake in a 350°F oven for 50–60 minutes, or until a knife inserted halfway between the center and edge comes out clean.
5. Cool on a wire rack. -

# Seven Minute Frosting
*Frosts one 2-layer cake or equivalent*
## Ingredients
- 2 egg whites
- 1 1/2 cups sugar
- 5 Tbsp water
- 1 1/2 tsp light corn syrup (or 1/4 tsp cream of tartar)
- 1/8 tsp salt
- 1 tsp vanilla
## Instructions
1. Combine egg whites, sugar, water, corn syrup (or cream of tartar), and salt in the top of a double boiler.
2. Beat with a hand mixer over boiling water, beating constantly for 7 minutes until frosting forms stiff, glossy peaks.
3. Remove from heat and add vanilla.
4. Beat 1 minute more until frosting is thick enough to spread.
5. Use immediately — seven minute frosting sets quickly and does not hold well once it begins to cool. -
Prune Cake
PRUNE CAKE
2 cups flour
1 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon salt
1 teaspoon soda
3/4 cup crisco
1 cup buttermilk
1 cup cooked prunes (not to soft)
1 1/2 cup sugar
3 eggs
Cream crisco and sugar, add eggs sift dry
ingredients together and add alternately
with milk. Stir in nuts and chopped prunes
by hand. Bake in long pan 40 or 45 min.

1 cup sugar
1 stick butter
1 tablespoon corn syrup
1 teaspoon vanilla
1/2 cup butter milk
Mix all ingredients together in sauce pan
and cook till it forms soft ball when
dropped in cold water.

## Ingredients
### Cake
- 2 cups flour
- 1 tsp nutmeg
- 1 tsp cinnamon
- 1 tsp salt
- 1 tsp baking soda
- 3/4 cup Crisco
- 1 cup buttermilk
- 1 cup cooked prunes (not too soft)
- 1 1/2 cups sugar
- 3 eggs
### Icing
- 1 cup sugar
- 1 stick butter
- 1 Tbsp corn syrup
- 1 tsp vanilla
- 1/2 cup buttermilk
## Instructions
### Cake
1. Cream Crisco and sugar together.
2. Add eggs.
3. Sift dry ingredients together.
4. Add dry ingredients alternately with buttermilk.
5. Stir in nuts and chopped prunes by hand.
6. Bake in a long pan 40 or 45 minutes.
### Icing
1. Mix all ingredients together in a saucepan.
2. Cook until mixture forms a soft ball when dropped in cold water.
### Assembly
1. Apply icing to cooled cake. -
Seafoam Candy
The recipe for Seafoam candy we are printing is from
our Journal files. It is very much like divinity — hope it
is what you are looking for.
SEAFOAM CANDY
2 egg whites
1 cup light brown sugar, firmly packed
1 cup granulated sugar
2 tablespoons light corn syrup
½ cup water
¼ teaspoon salt
1 teaspoon vanilla extract
½ cup chopped nuts
In small bowl of electric mixer let egg whites warm to
room temperature — about 1 hour. In heavy 2-quart
saucepan, combine sugars, corn syrup and water. Cook,
stirring with wooden spoon, over low heat until sugar is
dissolved. Continue cooking over medium heat without
stirring to 255 degrees on candy thermometer, or the
hard ball stage.
Meanwhile, at high speed, beat egg whites until stiff
peaks form when beaters are slightly raised. In a thin
stream, gradually pour hot syrup over egg whites, beat-
ing constantly at high speed. Continue beating until
mixture is stiff enough to hold its shape when beaters are
raised. With wooden spoon, beat in vanilla and nuts.
Drop by rounded teaspoonfuls onto tray lined with wax
paper. Let stand at room temperature until dry.

# Seafoam Candy

## Ingredients
- 2 egg whites
- 1 cup light brown sugar, firmly packed
- 1 cup granulated sugar

Blueberry Sauce
BLUEBERRY SAUCE
This sauce can be used for French toast,
pancakes, waffles, over ice cream or cake,
layered with pudding in parfait glasses —
however you enjoy it.
2 cups fresh blueberries
½ cup water
6 tablespoons corn syrup
1 tablespoon lemon juice
1 tablespoon butter or margarine
Simmer 1 cup of blueberries with wa-
ter, corn syrup and lemon juice for 10 to
15 minutes. Remove from heat, add but-
ter, stir and let cool slightly. Stir in anoth-
er cup of blueberries. Serve warm or cold.

## Ingredients
- 1 1/4 cup juice
- 1 1/2 cup sugar
- 1/4 cup corn syrup
- 1 Tbsp lemon juice
- 1/4 tsp oil (to prevent spattering)

1. Heat juice in a kettle.
2. Add sugar and stir to dissolve.
3. Bring to a full rolling boil and boil hard for 1 minute.
4. Use 1/4 tsp oil to prevent spatters. -
Pacific Pie / Pecan Pie
Pacific Pie
1# can salmon, dash of pepper
1/2 tsp salt, 1 egg beaten, ½ c finely
diced sweet pickle, 1½ c fresh bread
crumbs, ½ (6oz) can mushroom sauce
1/3 c. liquid (fish liquid plus water)
2 hard cooked eggs, finely chopped, 2 (6 oz)
cans mushroom sauce heated.
Drain salmon, reserving liquid. Discard
skin & bones. Flake fish. Blend with remaining
ingredients except eggs & 2 cans of mushroom sauce
Back:
Pack mixture into greased 8 inch
round pie pan. Bake in moderate
oven (350 degrees about 40 min. or until
pie is lightly browned & firm. Cut into
serving wedges garnish with hard cooked
eggs and serve with hot mushroom sauce

# Pacific Pie
*Serves 6*
## Ingredients
### Filling
- 1 lb can salmon, drained (reserve liquid)
- 1/2 tsp salt
- Dash of pepper
- 1 egg, beaten
- 1/2 cup sweet pickle, finely diced
- 1 1/2 cups fresh bread crumbs
- 1/2 of a 6 oz can mushroom sauce (approximately 3 oz)
- 1/3 cup liquid (reserved salmon liquid topped up with water)
- 2 hard cooked eggs, finely chopped
### Serving Sauce
- 2 cans (6 oz each) mushroom sauce, heated
## Instructions
1. Preheat oven to 350°F. Grease an 8 inch round pie pan.
2. Drain salmon, reserving liquid. Discard skin and bones. Flake fish into a large bowl.
3. Add salt, pepper, beaten egg, sweet pickle, bread crumbs, mushroom sauce, and 1/3 cup liquid (salmon liquid topped up with water). Mix until well blended.
4. Fold in chopped hard cooked eggs.
5. Pack mixture firmly into prepared pie pan.
6. Bake at 350°F for approximately 40 minutes until lightly browned and firm.
7. Cut into wedges and garnish with additional sliced hard cooked egg if desired.
8. Serve with heated mushroom sauce spooned over each wedge.
## Editor's Notes
- **Mushroom sauce** appears twice in different roles — 1/2 of a 6 oz can is incorporated into the filling as a binder and flavor base; 2 full 6 oz cans are heated separately as a serving sauce. The same bottled mushroom sauce referenced in the Cheese Spread for Canapés and Bran Meat Cakes recipes elsewhere in this collection. Modern substitute: Worcestershire sauce in the filling; a simple cream of mushroom sauce for serving.

# Pecan Pie
*Baked in 1 unbaked pie crust*
## Ingredients
- 1 unbaked 9" pie crust
- 3 eggs, well beaten
- 1 cup sugar
- 1 cup corn syrup (light or dark Karo)
- 1 to 1 1/2 cups pecan halves
- 2 Tbsp butter, melted (see Editor's Notes)
- 1 tsp vanilla (see Editor's Notes)
- Pinch of salt (see Editor's Notes)
## Instructions
1. Preheat oven to 350°F.
2. Beat eggs well in a large bowl.
3. Add sugar and corn syrup; mix until well combined.
4. Stir in melted butter, vanilla, and salt.
5. Fold in pecans.
6. Pour filling into unbaked pie crust.
7. Bake at 350°F for 50 to 60 minutes until filling is set and does not jiggle when gently shaken.
8. Cool completely before slicing — filling sets fully as it cools. -
Fruit Juice Syrup
FRUIT JUICE SYRUP
4 cups berry juice (blackberry, logan, currant,
etc.)
2 cups sugar
1 to 2 cups light corn syrup
Put ingredients together and boil about 3 minutes. The
corn syrup will tend to thicken the juice without making
it intensely sweet. Adding more sugar without the syrup
will tend to make jelly, and if a great deal of sugar is
added to thicken the juice, the mixture will sugar. The
corn syrup prevents this and still makes the mixture a
consistency to pour, but not run too much. Use for hot-
cakes, waffles, ice cream and puddings.
NOTE: If you wish to store for later use, pour hot
syrup into hot, sterilized jars and seal with hot lids and
rings. Do not process as syrup tends to break down.
