Bran Muffins, High Fiber
BRAN MUFFINS, HIGH FIBER NABISCO
2 cups Nabisco 100% Bran
1¼ cups milk
1 cup all-purpose flour
1/3 cup firmly packed brown sugar
2 teaspoons baking powder
½ teaspoon baking soda
¼ cup margarine, melted
1 egg, beaten
Combine bran and milk; let stand for 5 minutes.

Combine next four ingredients; set aside.
Mix margarine and egg into bran mixture.
Stir in flour mixture just until blended.
Spoon into 12 greased, 2½-inch muffin pan cups.
Bake at 400 degrees for 18 minutes or till done.
Serve warm.

## Ingredients
- 2 cups Nabisco 100% Bran
- 1 1/4 cups milk
- 1 cup all-purpose flour
- 1/3 cup firmly packed brown sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 cup margarine, melted
- 1 egg, beaten
## Instructions
1. Combine bran and milk; let stand for 5 minutes.
2. Combine the next four ingredients (flour, brown sugar, baking powder, and baking soda); set aside.
3. Mix margarine and egg into bran mixture.
4. Stir in flour mixture just until blended.
5. Spoon into 12 greased, 2 1/2-inch muffin pan cups.
6. Bake at 400°F for 18 minutes or till done.
7. Serve warm.

slightly floured board. roll to 1/8 inch thickness
and fit over small pan to make tarts. bake in a

# Orange Bran Tarts
## Ingredients
- 1 cup bran
- 1 cup flour
- 1/2 tsp salt
- 2 Tbsp powdered sugar
- 1/2 cup shortening
- 5 Tbsp strained orange juice
## Filling
- 1 1/2 cups sliced sugared oranges
- Whipped cream, to top
## Instructions
1. Combine dry ingredients; add orange juice to make a stiff dough.
2. Roll out over a slightly floured board to 1/8 inch thickness.
3. Fit over small pans to make tarts.
4. Bake in a hot oven (400°) about 12 minutes.
5. When cold, fill with sugared oranges and top with whipped cream. -

## Ingredients
- 1 lb ground beef
- 1/2 lb ground veal
- 3/4 cup bran
- 1 egg, beaten
- 2 Tbsp minced onion
- 1 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 cup milk
## Instructions (Inferred)
1. Combine ground beef, ground veal, bran, egg, minced onion, salt, and pepper in a large bowl.
2. Add milk and mix until just combined — do not overmix.
3. Form into patties approximately 3/4" thick.
4. Pan-fry in a lightly greased skillet over medium heat, approximately 4–5 minutes per side, until browned and cooked through.
5. Serve with tomato sauce, brown sauce, or mushroom sauce. -

It's our family favorite!
2 cups whole-wheat flour
1 1/2 cups oat bran
1 1/2 cups raw bran
2 cups milk, or rice/soya milk
1/2 cup canola oil
1/2 cup honey
1/2 cup Sucanat, or dark brown sugar
3 eggs, slightly beaten
1 tbsp. baking powder
1 tsp. sea salt
2 medium apples, shredded
1 cup carrot pulp (from juice machine), or 3 carrots finely shredded
2 bananas, mashed
1 tsp. cinnamon
1 cup pecans or walnuts, chopped fine (optional)
1 cup raisins (optional)
Preheat oven to 375 degrees. Beat oil, Sucanat, honey, carrot pulp, mashed bananas, shredded apples,
eggs and milk together.
Add the wheat and oat bran and let sit 10 minutes. Pre-mix the dry ingredients and fold into the bran
mixture until just mixed (don't overmix). Add the pecans and raisins.
Fill muffin tins with mixture (don't overfill) and bake for approx. 20 minutes.
