Cranberry Fruit and Nut Mold
CRANBERRY FRUIT AND NUT MOLD EDNA HARRELL
CLEARWATER
1 6-oz. or 2 3-Oz. package any red jello
2 cups boiling water
1 8-oz. can jellied cranberry sauce, mashed
1½ cup cold water
1 cup peeled and diced apples
½ cup nuts
Dissolve jello in boiling water. Add mashed
cranberry sauce; stir until smooth; add cold
water. Chill until thickened; fold in apples
and nuts. Pour into a 6-cup mold. Chill until
firm. Cut in squares; place on lettuce leaf
and serve. Makes 10-12 servings.

*Makes 10–12 servings*
## Ingredients
- 1 6-oz. or 2 3-oz. package any red jello
- 2 cups boiling water
- 1 8-oz. can jellied cranberry sauce, mashed
- 1 1/2 cups cold water
- 1 cup peeled and diced apples

1 Baked pie shell - Cooled
1 pint fresh berries stemmed
washed & laid in pie shell
1 package frozen strawberries
3/4 C. sugar
1/4 C. flour
Pinch salt
Cook above until
thickened. While still
hot pour in 1/4 C.
Strawberry Jello
powder. Stir until
dissolved
Cool
Pour over berries

# Aletha's Strawberry Pie
*Recipe from the kitchen of Aletha*
## Ingredients
- 1 baked pie shell, cooled
- 1 pint fresh strawberries, stemmed, washed, and laid in pie shell
- 1 package frozen strawberries
- 3/4 cup sugar
- 1/4 cup flour
- Pinch of salt
- 1/4 cup strawberry Jello powder
## Instructions
1. Stem, wash, and lay the fresh berries in the cooled baked pie shell.
2. Combine the frozen strawberries, sugar, flour, and salt in a saucepan.
3. Cook the mixture until thickened.
4. While still hot, pour in 1/4 cup strawberry Jello powder and stir until dissolved.
5. Cool the mixture.
6. Pour the cooled mixture over the berries in the pie shell.
7. Chill until set. -
Heavenly Hash
Q.: On Oct. 10 L.M., Eugene, requested a "Heavenly
Hash" recipe. I wonder if this might be it:
1 pint cottage cheese (small curd)
1 package strawberry Jello (do not add water)
1 large can drained fruit cocktail
1 container Cool Whip (9 ounces)
Mix together cottage cheese, dry Jello, and fruit cock-
tail; let stand 10 minutes. Fold in Cool Whip. Refrigerate
in square dish for cutting and serving on lettuce leaf or in
bowl for taking to potluck. Serves 8 to 10. (Lemon Jello
and crushed pineapple combination is also good.) V.S.,
Milwaukie.

# Heavenly Hash
*Recipe from the kitchen of V.S., Milwaukie, Oregon*
*Serves 8 to 10*
## Ingredients
- 1 pint small curd cottage cheese
- 1 package strawberry Jello, dry — do not add water
- 1 can (29 oz) fruit cocktail, drained
- 1 container (9 oz) Cool Whip
## Instructions
1. Combine cottage cheese, dry strawberry Jello, and drained fruit cocktail in a large bowl.
2. Stir to combine and let stand 10 minutes.
3. Fold in Cool Whip until evenly incorporated.
4. Transfer to a square dish for slicing and serving on lettuce leaves, or to a bowl for potluck transport.
5. Refrigerate until set before serving.
## Variation
Substitute lemon Jello for strawberry and crushed pineapple (drained) for fruit cocktail. -

Rhubarb Dessert
4 c. diced rhubarb
2 c. sugar
1 pkg. red jello - cherry
2 c. min. marshmellows
1 c. Cream whipped
graham crac. Crust
Cook rhubarb & sugar till soft. Add jello
& marshmellows - Cool - Fold in whipped
Cream. Use brown sugar in place of
white in making Crust. Put 1/2 in bottom
(over)
Back:
of 9x13 pan. Add rhubarb. Cover with
remaining Crackers. Chill several
hours.

## Ingredients
- Graham cracker crust (use brown sugar in place of white when making crust)
- 4 cups diced rhubarb
- 2 cups sugar
- 1 pkg. red jello - cherry
- 2 cups miniature marshmallows
- 1 cup cream, whipped
## Instructions
1. Cook rhubarb and sugar till soft.
2. Add jello and marshmallows.
3. Cool.
4. Fold in whipped cream.
5. Put 1/2 of graham cracker crust in bottom of 9x13 pan.
6. Add rhubarb mixture.
7. Cover with remaining crackers.
8. Chill several hours. -

# Upside Down Cake Mix
## Ingredients
- 1 white cake mix
- 1 cup sugar
- 1 pkg (10 oz) small marshmallows
- 2 cups rhubarb, thinly sliced
- 1 pkg strawberry jello
## Instructions
1. Place rhubarb in a thin layer on the bottom of the pan.
2. Sprinkle sugar over the rhubarb.
3. Add dry jello over the sugar layer.
4. Scatter marshmallows over the jello layer.
5. Mix white cake mix according to package directions and pour over the top.
6. Bake at 350°.
7. Turn upside down when done. -

- 2 pkgs lemon jello
- 1 1/2 pt whipping cream

2. Save and heat juice to dissolve jello.
3. Chill jello and fold in the fruits.
4. Chill until slightly congealed before folding in cream.
5. Chill again. -

1 small lime jello
1 c hot water
1 c applesauce
1/2 c walnuts chopped
1/2 c celery cut fine
3 tbs salad dressing
Combine jello & water till dissolved then add
all other ingredients. Jello does not have to
set before adding ingredients
