Orange Fluff Topping / Spice Cake & Icing
Card 1 Front:
over and hit edge sharply on table to loosen.
ORANGE FLUFF TOPPING— Mix together thoroughly
in top of double boiler 3 egg yolks, ½ cup sugar. Stir into
mixture ⅓ to ½ cup orange juice. Cook over hot water,
stirring constantly, until mixture thickens . . . about
15 minutes. Remove from heat. Stir in 1 tbsp. grated
orange rind. Cool. Fold in 1 cup heavy cream, whipped, ½
cup chopped, toasted, blanched almonds or ½ cup fresh
grated or packaged coconut. Serve on wedges of cake.
Makes about 3 cups topping.

## Ingredients
- 3 egg yolks
- 1/2 cup sugar
- 1/3 to 1/2 cup orange juice
- 1 Tbsp grated orange rind
- 1 cup heavy cream, whipped
- 1/2 cup almonds, blanched, toasted, and chopped
*(or 1/2 cup fresh grated or packaged coconut)*
## Instructions
1. Combine egg yolks and sugar in the top of a double boiler; mix together thoroughly.
2. Stir in orange juice.
3. Cook over hot water, stirring constantly, until mixture thickens — approximately 15 minutes.
4. Remove from heat and stir in grated orange rind.
5. Cool completely.
6. Whip heavy cream to stiff peaks.
7. Fold whipped cream into the cooled orange mixture until evenly combined.
8. Fold in chopped toasted almonds or coconut.
9. Serve over wedges of cake. -

Apple Kuchen
½ cup butter or margarine, softened
1 package Betty Crocker yellow cake mix
½ cup flaked coconut
1 can (20 ounces) pie-sliced apples, well drained
or 2½ cups sliced pared baking apples
½ cup sugar
1 teaspoon cinnamon
1 cup dairy sour cream
2 egg yolks or 1 egg
Heat oven to 350°. Cut butter into cake mix (dry) until crumbly. Mix in coconut. Pat mixture lightly into
ungreased oblong pan, 13x9x2 inches, building up slight edges. Bake 10 minutes.
Arrange apple slices on warm crust. Mix sugar and cinnamon; sprinkle on apples. Blend sour cream
and egg yolks; drizzle over apples. (Topping will not completely cover apples.) Bake 25 minutes or until
edges are light brown. (Do not over bake.) Serve warm. 12 to 15 servings.

- 1/2 cup flaked coconut

Heat oven to 350 degrees. In large bowl, stir
together flour, crumbs, sugar and salt. Add
butter, cut in until mixture resembles coarse
crumbs. Stir in 1 beaten egg. Press evenly
onto bottom of ungreased 13x9x2" baking pan.
Bake 25 min. or until golden. In large mixer

## Ingredients
### Filling
- 1 cup sugar
- 1/2 cup all-purpose flour or 1/4 cup cornstarch
- 1/4 tsp salt
- 3 cups milk
- 4 slightly beaten eggs (yolks used in filling)
- 3 Tbsp butter
- 1 1/2 tsp vanilla
- 1 3/4 cups (3 1/2-ounce can) flaked coconut, divided (1 cup for filling, remainder for topping)
### Meringue
- 4 egg whites
- 1 tsp vanilla
- 1/2 tsp cream of tartar
- 1/2 cup sugar
### Crust
- 1 baked, cooled 9" pie shell
## Instructions
### Filling
1. In a medium saucepan, combine 1 cup sugar, flour, and salt; gradually stir in milk.
2. Cook and stir over medium-high heat until thickened and bubbly. Cook and stir 2 minutes longer. Remove saucepan from heat.

readers and am glad to be able
to send in a recipe for graham
cracker layer cake, hoping that
this is the one wanted by
"Anxious" of St. Paul.
1-3 cup shortening.
1 cup sugar.
2 eggs.
1 cup milk.
1 cup flour.
2 teaspoons baking powder.
½ cup cocoanut.
1 cup graham cracker crumbs.
1 teaspoon vanilla.
1 cup chopped nut meats op-
tional).
Cream butter and sugar, add
beaten eggs, milk and flour sifted
with the baking powder, beat well
and stir in the coconut, nutmeats
(if liked) and the cracker crumbs
last. Mix quickly, flavor and bake
in two layer pans in a moderate
oven. Put the layers together with
a custard filling.
FILLING:
Cook in a double boiler a cup
of hot milk, 1 tablespoon of butter,
2 tablespoons of flour, 2 table-
spoons of sugar, 1 beaten egg, pinch
of salt and ¼ teaspoon of vanilla.
Cook in double boiler until thick,
stirring often. Add vanilla after
it has cooled.

## Ingredients
### Cake
- 1/3 cup shortening
- 1 cup sugar
- 2 eggs
- 1 cup milk
- 1 cup flour
- 2 tsp baking powder
- 1/2 cup coconut

- 1 tsp vanilla
- 1 cup chopped nut meats (optional)
### Custard Filling
- 1 cup hot milk

- 2 Tbsp flour
- 2 Tbsp sugar

- Pinch of salt
- 1/4 tsp vanilla
## Instructions

1. Cream shortening and sugar together.
2. Add beaten eggs, milk, and flour sifted together with the baking powder; beat well.
3. Stir in the coconut, nut meats (if liked), and the graham cracker crumbs last.
4. Mix quickly, add vanilla to flavor.
5. Bake in two layer pans in a moderate oven.

2 cups milk
¾ cup sugar
1 teaspoon vanilla
Dash of baking soda
1 cup dried or fresh grated coconut
Combine milk, sugar, vanilla and baking soda in a
saucepan. Bring to a boil. Cook over low heat 2½ hours
or until the mixture forms a soft ball when a small
amount is dropped in cold water. Stir occasionally.
Test the mixture once or twice to see whether desired
stage has been reached. Spread the Dulce de Leche be-
tween the Alfajores. Sprinkle the coconut on a piece of
wax paper and roll each cooiie on its side to pick up the
coconut. Yield: ⅔ cup filling.

adding more water as needed to keep can covered. Cool

# Rice Flake Macaroons
## Ingredients
- 4 egg whites
- 1/2 cup sugar
- 1/4 lb pitted dates, chopped (see Editor's Notes)
- 1 tsp vanilla
- 1/2 tsp almond extract
- 2 cups rice flakes or corn flakes
- 1 cup shredded coconut (see Editor's Notes)
- 3/4 cup almonds or pecans, chopped
## Instructions
1. Chop dates finely and set aside.
2. Beat egg whites until very stiff peaks form.
3. Fold in sugar gently.
4. Add vanilla and almond extract; fold in gently.
5. Fold in rice or corn flakes, coconut, chopped dates, and nuts until just combined.
6. Drop by spoonfuls onto waxed paper laid in a baking pan.
7. Bake in a very slow oven (250°F) for 10 to 15 minutes until just set and very lightly golden.
8. Lift waxed paper from pan and place on a damp surface — the moisture releases the macaroons from the paper cleanly without breaking. -

SHRIMP GINGER CURRY
½ cup butter or margarine
½ cup finely chopped onion
½ cup finely chopped celery
2 cloves garlic, minced
1½ to 2 tablespoons peeled, grated
fresh ginger
1½ to 2 teaspoons curry powder
⅓ cup flour
3 cups light cream or milk
2 teaspoons lime juice
1 teaspoon salt
1 pound medium prawns, cooked,
shelled and deveined
Condiments:
Dry roasted peanuts
Toasted coconut
Raisins
Chutney
In skillet, melt butter. Add onion, celery
and garlic; saute until tender. Add ginger,
curry and flour; heat until bubbly. Re-
move from heat; stir in cream, lime juice
and salt. Cook and stir over low heat,
until thickened. Add shrimp; heat
through. Serve over hot cooked rice. Pass
suggested condiments. Makes 4 to 6 serv-
ings.
Note: 1½ to 2 cups cubed, cooked
chicken may be substituted for the
shrimp. Use 1½ cups each chicken broth
and light cream for liquid.

1 tablespoon brandy
Cream butter, add sugar and continue creaming. Add
the egg and egg yolks, beating until light and frothy. Add
the vanilla and rind. Sift the cornstarch, flour and baking
powder and add to butter mixture, mixing well. Add
brandy. Blend until dough is smooth.
Chill dough in refrigerator for a few hours, or until
firm enough to roll out. Preheat oven to 325 degrees. Roll
dough 1/2-inch thick on a floured surface. Cut into rounds
with a 1 3/4-inch floured cookie cutter. Place on buttered
baking sheet. Bake at 325 degrees for 15 to 20 minutes,
or until very lightly browned. Set aside to cool. Fill each
pair of cookies with Dulce de Leche. Roll edges in coco-
nut. Yield: 24 filled cookies.
