1 mince onion 2 bay-leaves
½ cup diced celery. 3 tblspn. brown sugar
1 chopped green pepper. 10 whole cloves additional
in boiling water till tender. allow ham to cool in
liquid if possible. remove-cover top of ham with brown
sugar. and stick in the whole cloves. place in a
baking dish in a moderate oven. add half cup full
375°
of hot water. - about 30 minutes.

## Ingredients
- 1 smoked ham
- 1 onion, minced
- 1/2 cup diced celery
- 1 green pepper, chopped
- 5 whole cloves
- 2 bay leaves
- 3 Tbsp brown sugar
- 10 whole cloves (additional)
## Instructions
1. Place ham, onion, celery, green pepper, 5 whole cloves, and bay leaves in boiling water and cook until tender.
2. Allow ham to cool in liquid if possible.
3. Remove ham and cover top with brown sugar.
4. Stick in the 10 whole cloves.
5. Place in a baking dish in a moderate oven (375°).
6. Add half a cup of hot water.
7. Bake about 30 minutes. -

## Ingredients
- 1 pound link sausages
- 4 apples, peeled, cored, and sliced
- 1 tablespoon sugar
- 1/2 tsp ground cinnamon
- 3 Tbsp sausage fat (reserved from cooking)
## Instructions
1. Prick the skin of sausages. Place on a rack in a broiler pan. Cook until done, about 12 minutes.
2. Sprinkle sliced apples with sugar and cinnamon mixed.
3. Fry apples in 3 Tbsp sausage fat until apples are golden.
4. Serve sausage in center of platter. Pile sautéed apples in a ring around them. -

# Baked Goulash
## Ingredients
- 1/4 lb salt pork, cubed
- 1 large onion, chopped
- 1 1/2 lbs veal shoulder, cubed
- 2 cans tomato soup
- 2 cans water
- 1 tsp salt
- 3 bay leaves
- 1/4 tsp pepper
- 1 tsp paprika
- 2 Tbsp flour
- 6 small onions, halved or left whole
- 6 carrots, cut into strips
- 6 potatoes, sliced
## Instructions
1. Cube salt pork and fry out in a skillet until fat is rendered and pork is browned. Transfer pork to a large casserole.
2. In the remaining pork fat, brown the chopped large onion and cubed veal together. Transfer to the casserole.
3. Add tomato soup and most of the water to the skillet. Add bay leaves, salt, pepper, and paprika.
4. Mix flour with the remaining water until smooth; stir gradually into the skillet mixture.
5. Cook slowly over medium heat, stirring constantly, until slightly thickened.
6. Pour sauce over meat in casserole.
7. Add small onions, sliced potatoes, and carrot strips to the casserole; mix gently to combine.
8. Cover and bake at 350°F for 2 1/2 to 3 hours until meat and vegetables are very tender. -

## Meat Rolls
1. Roll thin slices of meat or veal loaf around whole stuffed olives or whole sweet pickles.
2. Stick colored toothpicks through the roll at 1/2 inch spaces.
3. Cut in slices between the picks.
## Bologna Rolls
1. Spread slices of large bologna with cream cheese mixed with prepared horseradish.
2. Roll up with a pick.
3. Place parsley in the end of each roll.

## Ingredients
- 1 lb salt pork
- 1 qt dry beans
- 1 tsp dry mustard
- 1/2 tsp salt
- 2 tsp sugar
- 1 tsp pepper
- Pinch of baking soda
- Hot water to cover
## Instructions
1. Combine salt pork, dry beans, dry mustard, salt, sugar, pepper, and a pinch of soda.
2. Cover with hot water.
3. Bake all day. -

## Ingredients
- 2 cups flour
- 1/4 cup sugar
- 1/4 tsp salt
- 1 tsp baking powder
- 1 egg, well beaten
- 1 quart milk
- 1/2 pound fresh pork
- Salt and pepper to taste
## Instructions
1. Cut pork into small, thin pieces and fry slightly in a large baking pan.
2. Remove pork from pan.
3. Sift together flour, sugar, salt, and baking powder.
4. Add beaten egg to milk, then blend with dry ingredients.
5. Add the batter to the grease remaining in the baking pan.
6. Season pork lightly with salt and pepper and place on top of the batter.
7. Bake uncovered in a moderate oven (350°F) for about an hour.

shred the potatoes is to use the shredding
attachment on your electric mixer. Lack-
ing this, a hand grater may be used. Mix
together shredded potato, milk, flour, and
salt; spread in greased baking pan or
casserole, large enough so that the mix-
ture will be only about ½-inch thick.
Place pork slices on top and bake for 1
hour uncovered in a moderate oven (350°
F.). Serves six.

- 2 cups milk
- 1/2 cup flour
- 2 tsp salt
- 6 thin slices fresh pork
## Instructions
1. Shred the potatoes using the shredding attachment on an electric mixer, or a hand grater.
2. Mix together the shredded potato, milk, flour, and salt.
3. Spread the mixture in a greased baking pan or casserole, large enough so that the mixture will be only about 1/2-inch thick.

## Rolled Watercress and Bacon Sandwiches
### Ingredients
- Watercress, chopped very fine
- 1 or 2 slices crisp bacon, broken in pieces
- Small amount mayonnaise
- Thin slices white bread, halved
### Instructions
1. Chop watercress very fine.
2. Add 1 or 2 slices crisp bacon, broken in pieces.
3. Blend with a small amount of mayonnaise.
4. Spread on halves of thin slices of white bread and roll.
5. Stick a sprig of watercress in ends to serve.

- 2 cups sharp Cheddar cheese, grated
- 1 1/2 lbs link sausage, cut up (fry, drain thoroughly)
- 4 eggs
- 2 1/2 cups milk
- 3/4 tsp dry mustard
- 1 can cream of mushroom soup
- 1/2 cup milk (to dilute soup)
## Instructions
1. Place bread in bottom of well greased casserole.
2. Top with cheese and cooked sausage.
3. Beat eggs, then beat in 2 1/2 cups milk and mustard.
4. Pour over the bread, cheese, and sausage in dish.
5. Refrigerate overnight or at least 4 hours.
6. Next day, dilute soup with 1/2 cup milk and pour over mixture.
7. Bake at 350°F for 1 1/2 hours.
8. Additional mushrooms can be added to soup if desired.
9. Serve with fruit and coffee cake. -

# Peachy Pork Chops
## Ingredients
### Stuffing
- 1 1/2 cups chopped onion
- 1 1/2 cups chopped celery
- 1/2 cup margarine
- 6 cups dry bread cubes
- 1/2 tsp poultry seasoning
- 1/2 tsp rubbed sage
- 1/8 tsp pepper
- 1 cup canned peaches (8 oz, drained and diced)
- 2 eggs
- 1 cup water
### Pork Chops
- Pork chops (4–6 bone-in pork chops approximately 1" thick)
- Olive oil
- Garlic salt
- Fresh parsley (for garnish)
### Topping
- 1/4 cup peach preserves
## Instructions
1. Sauté onion and celery in margarine until softened.
2. Combine sautéed vegetables with dry bread cubes, poultry seasoning, sage, and pepper.
3. Add diced peaches, eggs, and water; mix until combined.
4. Season pork chops with garlic salt on both sides.
5. Brown pork chops in olive oil over medium-high heat.
6. Place stuffing in a greased baking dish.
7. Arrange browned pork chops over stuffing.
8. Spread peach preserves over the top of the pork chops.
9. Bake at 350°F for 45–60 minutes until pork chops are cooked through.
10. Garnish with fresh parsley before serving.
