Brain & Egg Omelet
Brain & egg omelet.
wash pair calf brains in cold water let stand a few
minutes. chop onions and some parsley. drain. brain
cut into 1/4. dust lightly with flour. saute in 3 tbs.
shortening with onion and parsley chopped fine. season
well. Beat up 6 eggs until very light. stir in 6 tbs
season with salt & cayenne pour over brains in hot milk.
skillet. Bak in oven 325° f. bake slowly.

## Ingredients
- 1 pair calf brains
- Onions, chopped fine
- Parsley, chopped fine
- Flour (for dusting)
- 3 Tbsp shortening
- Salt, to season
- Cayenne, to season
- 6 eggs
- 6 Tbsp milk
## Instructions
1. Wash calf brains in cold water and let stand for a few minutes.
2. Chop onions and some parsley.
3. Drain brains and cut into quarters.
4. Dust lightly with flour.
5. Sauté in 3 Tbsp shortening with onion and parsley chopped fine. Season well.
6. Beat up 6 eggs until very light.
7. Stir in 6 Tbsp milk.
8. Season with salt and cayenne.
9. Pour over brains in a hot skillet.
10. Bake in oven at 325°F. Bake slowly.
Serves 4–6. -

# Bran Meat Cakes
## Ingredients
- 1 lb ground beef
- 1/2 lb ground veal
- 3/4 cup bran
- 1 egg, beaten
- 2 Tbsp minced onion
- 1 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 cup milk
## Instructions (Inferred)
1. Combine ground beef, ground veal, bran, egg, minced onion, salt, and pepper in a large bowl.
2. Add milk and mix until just combined — do not overmix.
3. Form into patties approximately 3/4" thick.
4. Pan-fry in a lightly greased skillet over medium heat, approximately 4–5 minutes per side, until browned and cooked through.
5. Serve with tomato sauce, brown sauce, or mushroom sauce. -

## Ingredients
- 4 Tbsp butter
- 1 1/2 cups sifted confectioners' sugar
- A few drops of milk or strong coffee
- Any flavor extract (if using milk)
- 1 Tbsp melted chocolate (if using coffee, for mocha icing)
## Instructions
1. Cream 4 Tbsp of butter until smooth and light.
2. Add 1 1/2 cups of sifted confectioners' sugar gradually, alternating with a few drops of milk or strong coffee as it stiffens.
3. With milk, any flavor extract may be used.
4. With coffee, add a tablespoon of melted chocolate for a mocha icing. -

## Ingredients
- 2 Tbsp margarine
- 1/2 cup white sugar
- 1 cup rich milk
- 1 cup sifted flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup raisins (or dates)
- 1/4 cup chopped walnuts
## Syrup
- 2 cups lukewarm water
- 1 cup brown sugar
- 2 tsp butter
- 1 Tbsp cornstarch
## Instructions
1. Cream 2 Tbsp margarine with 1/2 cup white sugar.
2. Add 1 cup rich milk, 1 cup sifted flour, 2 tsp baking powder, 1/2 tsp salt, 1/2 cup raisins, and 1/4 cup chopped walnuts. Mix to form a batter.
3. Make the syrup: combine 2 cups lukewarm water, 1 cup brown sugar, 2 tsp butter, and 1 Tbsp cornstarch. Mix well and boil for five minutes.
4. Grease a casserole dish.
5. Pour the syrup into the casserole first, then pour the batter over it.
6. Bake for one hour at 350°F. -

## Ingredients
- 1 cup carrots, ground
- 1 cup raw potatoes, ground
- 1 cup raisins, ground
- Orange peel, ground together with above
- 1/2 cup sugar
- 1 cup flour

- 1 tsp cinnamon
- Allspice

- 1 bunch carrots
- 1 tsp salt
- 2 Tbsp Crisco
- 2 Tbsp flour
- 1/2 tsp pepper
- 1 tsp sugar
- Few grains ground nutmeg
- 1 Tbsp minced parsley
## Instructions
1. Dice carrots. Cook in boiling salted water. Reserve the liquid.
2. Melt Crisco, add flour, pepper, and sugar. Stir until smooth.
3. Add two cups boiling stock in which carrots were cooked.
4. Stir until the mixture thickens, then add carrots.
5. Serve garnished with minced parsley. -

- 1/3 cup cocoa
- 1/2 cup boiling water
- 1 cup sugar
- 1 cup flour
- 1/2 tsp salt
- 1 1/2 tsp baking powder
- 1 egg, beaten
- 1/4 cup milk
- 1 tsp vanilla
## Instructions
1. Mix together shortening, cocoa, and boiling water.
2. Stir in 1 cup sugar.
3. Mix together flour, salt, and baking powder; add to other mixture and beat well.
4. Then add 1 beaten egg, 1/4 cup milk, and 1 tsp vanilla.
5. Pour into greased casserole and cover.
6. Bake at 350°F for 30 minutes.
7. Serve with Chocolate Sauce.

- 1 Tbsp shortening
- 1/2 cup grated cheese
- 3/8 cup milk or water

3. Add liquid gradually until soft dough is formed.
4. Roll 1/2 inch thick.
5. Cut with small cutter.

# Cheese Spread for Canapés

## Ingredients
- 6 packages (3 oz each) cream cheese (18 oz total)
- 3 Tbsp bottled mushroom sauce (see Editor's Notes)
- 1 Tbsp minced chives, or to taste
- 1 Tbsp paprika (for color)
## Instructions
1. Cream the cream cheese until smooth and soft.
2. Add mushroom sauce and mix well.
3. Add minced chives to taste.
4. Add paprika and mix until evenly colored.
5. Serve as a spread for canapés.
## Editor's Notes
- **Bottled mushroom sauce** was a common mid-century pantry condiment — a thin, dark, savory mushroom extract similar in character to Worcestershire sauce. largely unavailable today. Modern substitutions: Worcestershire sauce (same quantity), mushroom powder dissolved in a small amount of water, or Maggi seasoning sauce. -

Sift together 2 1/4 cups flour 350° den - good
1 T. Baking Powder
1/2 T. soda
1/2 T. salt
Cream 3/4 cup shortening
1 cup sugar
Blend in 2 eggs
add 2 Tbls milk
1 T. vanilla

Shape into balls - level small Tbls for each

cookie. Crush 2 1/2 cups corn flakes
Roll each cookie in same - Place on
cooky sheet - top each cookie with
a cherry, jam or jelly.

# Cherry Wink Cookies

## Ingredients
- 2 1/4 cups flour
- 1 Tbsp baking powder
- 1/2 tsp soda
- 1/2 tsp salt
- 3/4 cup shortening
- 1 cup sugar
- 2 eggs
- 2 Tbsp milk
- 1 tsp vanilla
- 2 1/2 cups corn flakes, crushed
- Cherries, jam, or jelly (for topping)
### Optional Add-ins
- 1 cup pecans
- 1 cup chopped dates
- 1/3 cup cherries
## Instructions
1. Preheat oven to 375°F.
2. Sift together flour, baking powder, soda, and salt.
3. Cream shortening and sugar together.
4. Blend in eggs.
5. Add milk and vanilla.
6. Mix in sifted dry ingredients.
7. If desired, add pecans, chopped dates, and cherries to the cookie mixture.
8. Shape dough into balls using 1 level tablespoon per cookie.
9. Roll each ball in crushed corn flakes.
10. Place on cookie sheet.
11. Top each cookie with a cherry, jam, or jelly.
12. Bake at 375°F for 8 to 12 minutes. -

nut meats. Fold in stiffly beaten egg whites. Spread over baked mi
mixture and return to moderatly hot oven for 25 minutes.
While hot. cut in squares and dust with conf. sugar.

4. Bake in a moderately hot oven about 15 minutes.
5. In the meantime, separate eggs and beat egg yolks until thick.

- 1/2 cup blanched shredded almonds
- 1/2 cup mayonnaise

- 1 Tbsp lemon juice
- Lettuce
- Stuffed olives
## Instructions
1. Combine chicken, pineapple, celery, almonds, and salt.
2. Marinate with lemon juice and mayonnaise.
3. Pile on a nest of lettuce.
4. Serve garnished with additional mayonnaise, almonds, and stuffed olives.
