HOLY THURSDAY APPLE BREAD THE TAMPA TRIBUNE
1 pkg. active dry yeast 3½ TB vegetable oil
1¼ c. warm water 5-6 c. all-purpose
½ c. lt. brown sugar flour
1 c. warm milk 1½ c. whole-wheat
2 tsp. salt flour
1 large apple peeled, cored and finely chopped
Mix yeast with ½ cup water and a pinch of brown
sugar in a large bowl. Set aside for 5 minutes.
Stir in remaining water, milk, remaining brown
sugar, salt and 2 tablespoons oil. Gradually
stir in 4 cups all-purpose flour. Mix thoroughly

and springy, about 5 minutes. Mix in the whole-

wheat flour and apple. Add more all-purpose
flour to make a soft dough. By hand or with a
dough hook on an electric mixer, knead dough 8
minutes, adding additional all-purpose flour to
make a dough that is smooth and not sticky.
Lightly oil a bowl with ½ tablespoon of the re-
maining oil, and place the dough in it, turning
the dough to coat completely. Cover, and allow
to rise until doubled, about 1½ hours.
Punch dough down and divide in two. Divide each
of these portions in three and form into balls.
Use the remaining oil to grease two loaf pans,
cover with a clean towel and allow to rise until
almost doubled, about 45 minutes.
Bake @ 350 degrees for 45 minutes, until brown.

## Ingredients

- 1/2 cup light brown sugar
- 1 cup warm milk
- 2 tsp salt
- 3 1/2 Tbsp vegetable oil
- 5–6 cups all-purpose flour
- 1 1/2 cups whole-wheat flour
- 1 large apple, peeled, cored, and finely chopped
## Instructions
1. Mix yeast with 1/2 cup warm water and a pinch of brown sugar in a large bowl. Set aside for 5 minutes.
2. Stir in remaining water, milk, remaining brown sugar, salt, and 2 Tbsp oil.

Curried Casserole (Turkey, Chicken or Veal)
CURRIED CASSEROLE
(TURKEY, CHICKEN OR VEAL)
3 cups cooked rice
1 medium onion, chopped
1 tart apple, diced
¼ cup butter or margarine
¼ cup flour
1 to 2 teaspoons curry powder
1 teaspoon salt
¼ teaspoon powdered ginger
1 cup milk
1 cup turkey or chicken broth, or 1 cup water
plus 1 chicken bouillon cube
2 cups cubed cooked turkey, chicken or veal
Chopped parsley
Cook rice according to directions on package. Pan-fry
onion and apple in butter or margarine in a large skillet
until onion is transparent, but not browned. Combine
flour, curry powder, salt and ginger and sprinkle over
the onion and apple. Stir to blend. Add milk and broth
gradually; stir and cook until thickened. Simmer gently 2
or 3 minutes. Add turkey, chicken or veal. Heat. Taste
and add more curry powder if desired.
Place cooked rice in a shallow 1½ or 2 quart casserole.
Pour curry mixture over rice. Sprinkle chopped parsley
over curry. Bake in a slow oven, 325 degrees, for 30
minutes or until bubbly. Serve hot with two or three
condiments, such as chutney, chopped peanuts, finely
chopped hard-cooked eggs or chopped cooked bacon.
Yields 6 to 8 servings.

Rhubarb-Strawberry Salad
Rhubarb-Strawberry Salad (Kolar)
2c. rhubarb, finely cut
½c. sugar } Cook till mushy; cool
½c. water
1 3oz. strawberry gelatin } Dissolve; cool;
1 c. boiling water mix w/ above mix
Add: ½ c. well-drained crushed pineapple
2 c. unpeeled finely chopped apple
¼ c. nutmeats, finely chopped. 9x9 pan

# Rhubarb-Strawberry Salad

## Ingredients
- 2 cups rhubarb, finely cut
- 1/2 cup sugar
- 1/2 cup water
- 1 package (3 oz) strawberry gelatin
- 1 cup boiling water
- 1/2 cup well-drained crushed pineapple
- 2 cups unpeeled finely chopped apple
- 1/4 cup nutmeats, finely chopped
## Instructions
1. Combine rhubarb, sugar, and water in a saucepan. Cook until mushy; cool.
2. Dissolve strawberry gelatin in boiling water; cool.
3. Mix the cooled gelatin with the rhubarb mixture.
4. Add crushed pineapple, chopped apple, and nutmeats; stir to combine.
5. Pour into a 9x9 pan and chill until set. -

GOLDEN YAM DELIGHT
¼ cup honey or maple syrup
⅓ cup orange juice
2 tablespoons safflower oil
2 medium yams—cooked, peeled and diced
1 apple, sliced raw with skin
1 large carrot—cooked and diced
2 tablespoons raisins
Combine honey, orange juice, oil. In a casserole make alternating layers of
the vegetables and the liquid mixture.
Top with raisins, cover and bake in a preheated 375° oven for 35 minutes.
Uncover and bake 10 more minutes.

## Ingredients
- 1/4 cup honey or maple syrup
- 1/3 cup orange juice
- 2 Tbsp safflower oil
- 2 medium yams, cooked, peeled and diced
- 1 apple, sliced raw with skin
- 1 large carrot, cooked and diced
- 2 Tbsp raisins
## Instructions
1. Combine honey, orange juice, and oil.
2. In a casserole, make alternating layers of the vegetables and the liquid mixture.
3. Top with raisins, cover and bake in a preheated 375° oven for 35 minutes.
4. Uncover and bake 10 more minutes.
