# Choc Cake

## Ingredients
- 1 1/4 cups sugar
- 1/2 cup shortening
- 2 eggs
- 4 Tbsp cocoa dissolved in 1/2 cup boiling water
- 1/2 cup sour milk with 1 tsp soda in it
- 2 cups flour
- 1/2 tsp salt
## Instructions
1. Combine sugar and shortening.
2. Add eggs and mix well.
3. Dissolve cocoa in boiling water and add to mixture.
4. Add sour milk with soda mixed in.
5. Add flour and salt; mix until combined.
6. Bake 325F for 30 minutes. -

1/4 cup butter & lard ( 1/4 of both or 2 tablesp shortning
3 tablesp cocoa, 1 cup sugar, 1 egg, 1 sour milk
1 teasp soda, 2 cups flour vanilla-
Put butter, lard, cocoa on stove and melt.
Add to sugar in which you have salt, soda
& flour, then egg, milk and flavouring
last, Beat good & well.

# Chocolate Cake

## Ingredients
- 2 Tbsp butter
- 2 Tbsp lard (or substitute 1/4 cup shortening for both)
- 3 Tbsp cocoa
- 1 cup sugar
- 1/2 tsp salt
- 1 tsp baking soda
- 2 cups flour
- 1 egg, beaten
- 1 cup sour milk
- 1 tsp vanilla
## Instructions
1. Combine butter, lard, and cocoa in a small saucepan over low heat; melt together, stirring until smooth. Set aside to cool slightly.
2. In a large bowl, combine sugar, salt, baking soda, and flour; mix well.
3. Add the melted butter and cocoa mixture to the dry ingredients and stir to combine.
4. Add beaten egg, sour milk, and vanilla last.
5. Beat well until smooth and fully combined.
6. Pour into a greased and floured 8x8 or 9x9 pan.
7. Bake at 350°F for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
8. Cool completely before frosting. -

2 teaspm. Calumet 2 gr. chocolate
½ t. salt 1 egg well beaten
½ cup shortening 1 teaspn. vanilla
¾ cup milk.
mix as usual- Bake greased pan 8x8
x2. inches in moderate oven 325- 1 hour

# Chocolate Fudge Cake
## Ingredients
- 2 cups flour
- 2 tsp Calumet (baking powder)
- 1/2 tsp salt
- 1/2 cup shortening
- 1 cup sugar
- 2 oz chocolate (2 squares baking chocolate)
- 1 egg, well beaten
- 1 tsp vanilla
- 3/4 cup milk
## Instructions
1. Sift together flour, baking powder, and salt; set aside.
2. Melt chocolate over low heat or in a double boiler; set aside to cool slightly.
3. Cream shortening and sugar together until light and fluffy.
4. Beat in the well-beaten egg.
5. Stir in cooled melted chocolate and vanilla.
6. Add the sifted dry ingredients alternately with milk, beginning and ending with flour, mixing just until combined.
7. Pour into a greased 8×8 pan.
8. Bake at 325°F for 1 hour, or until a toothpick inserted in the center comes out clean.
9. Cool completely before covering with fudge frosting. -

# Cocoa Brownies

## Ingredients
- 1 egg
- 1 cup sugar
- 1/2 cup melted butter or shortening (Spry)
- 1 1/2 cups flour
- 3 Tbsp cocoa
- 1/2 tsp baking soda
- 1/2 cup whole milk (sweet milk)
- 1/2 cup chopped nuts
- 1 tsp vanilla
## Frosting Ingredients
- 1 cup confectioners sugar
- 2-3 Tbsp cocoa (see Editor's Notes)
- 1/4 cup hot milk
- 2-3 Tbsp butter
## Instructions
1. Preheat oven to 350°F. Grease a rimmed cookie sheet or jelly roll pan.
2. Beat egg and sugar together until combined.
3. Stir in melted butter or shortening.
4. Sift together flour, cocoa, and baking soda several times until evenly combined.
5. Add sifted dry ingredients alternately with milk, mixing until smooth.
6. Stir in chopped nuts and vanilla.
7. Spread batter evenly onto prepared cookie sheet — batter will be thin.
8. Bake at 350°F for 15 minutes until set and edges are just pulling away from pan.
9. Frost while still warm.
## Frosting Instructions
1. Combine confectioners sugar and cocoa in a bowl.
2. Melt butter into hot milk.
3. Pour hot milk mixture over sugar and cocoa; stir until smooth and glossy.
4. Pour immediately over warm brownies and spread evenly.
5. Allow to set before cutting into bars.
## Editor's Notes
- **Cocoa missing from frosting** — original card lists "chocolate frosting" but omits cocoa from the ingredients. A frosting of powdered sugar, hot milk, and butter alone produces a plain glaze rather than a chocolate one; 2-3 Tbsp cocoa inferred as the missing ingredient. -

- 1 cup sweet milk
- 1/2 cup sugar (scant)
- 3/4 cup corn meal (granulated)
- 1 1/4 cup flour (all-round)
- 2 tsp cream of tartar
- 1 tsp baking soda
- 1 tsp salt
## Instructions
1. Beat egg until light.
2. Melt shortening and combine with egg, sweet milk, and sugar.
3. Add granulated corn meal and all-round flour, mixing well.
4. Stir in cream of tartar, baking soda, and salt.
5. Bake at 375°F for 15 minutes. -

# Corn Flake Pudding

## Ingredients
- 1 quart whole milk, scalded
- 1 1/2 cups corn flakes
- 1/2 cup molasses
- 1/2 cup sugar
- 2 eggs, beaten
- 1/4 cup pearl or quick-cooking tapioca granules
- 1 tsp butter
- Pinch of salt
## Instructions
1. Preheat oven to 300°F.
2. Scald milk in a heavy saucepan until just steaming; remove from heat.
3. Stir in corn flakes, molasses, sugar, tapioca, butter, and salt.
4. Allow mixture to cool slightly, then stir in beaten eggs.
5. Pour into a greased baking dish.
6. Set baking dish in a larger pan filled with hot water (water bath).
7. Bake at 300°F for 2 hours, until pudding is set and a knife inserted in the center comes out clean.
8. Serve warm or chilled. -

1 1/2 cup shredded carrots
2 " " cabbage.
1/4 " sweet pickle slices.
1/4 " French dressing.
3 tbs mayonnaise.
Cube c. beef. add carrots Cabbage and pickls
Moistin with french dressing. Chill 30 minutes

## Ingredients
- 1 (12 oz.) can corned beef, chilled
- 1 1/2 cups shredded carrots
- 2 cups shredded cabbage
- 1/4 cup sweet pickle slices
- 1/4 cup French dressing
- 3 Tbsp mayonnaise
## Instructions
1. Cube corned beef.
2. Add carrots, cabbage, and pickles.
3. Moisten with French dressing.
4. Chill 30 minutes.
5. Add mayonnaise and mix, or fill lettuce-lined bowl. -

## Ingredients
- 1 pkg cream cheese
- 1/4 cup Miracle Whip
- 1/2 Tbsp lemon juice
- 1/4 tsp salt
- 2/3 cup or 1 small can drained crushed pineapple
- 6 cherries, cut up
- 1/2 cup cream, whipped
## Instructions
1. Mix all ingredients together.
2. Put in refrigerator — will keep a long time. -

## Ingredients
- 1 1/2 cups flour
- 1 cup sugar
- 1/2 tsp soda
- 1 tsp cream of tartar
- Little salt
- 1/4 cup shortening (butter & lard)
- 2 eggs
- Sweet milk (enough to fill cup after adding eggs)
- Vanilla
## Instructions
1. Combine flour, sugar, soda, cream of tartar, and a little salt; sift all together three times.
2. Measure 1/4 cup shortening (butter and lard) into a cup.
3. Break 2 eggs into the shortening, then fill the cup (8 oz total) with sweet milk.
4. Add the liquid mixture and vanilla to the dry ingredients; mix to combine.
5. Bake at 350°F for 25–30 minutes. -

## Ingredients
- 1 stick (1/2 cup) butter
- 1 cup dates, cut up
- 1 tsp vanilla
- 1 cup sugar
- 2 eggs, beaten
- 1 cup flour
- 1/2 tsp baking powder
- 1/2 cup chopped nuts
- 1/2 tsp salt
## Instructions
1. Melt butter and dates together.
2. Add all other ingredients and mix together.
3. Bake in a cookie pan at 350°F for 30 minutes.
